Cook the Book – Herb-Cheese Bread

Herb-Cheese Bread

3 cups all-purpose flour
1/2 cup packed brown sugar
2 tablespoons shortening
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2/3 cup sour milk
2/3 cup grated cheddar cheese
2/3 cup cottage cheese
2 large eggs
1 teaspoon dried dill
½ teaspoon dried basil
½ teaspoon dried tarragon
½ teaspoon dried oregano

Preheat oven to 350°.  Grease one loaf pan. In a large bowl, sift together the dry ingredients. Make a well, then add the remaining ingredients and stir until just mixed. Spoon the mixture into the prepared pan and bake for 45 to 55 minutes.

Makes 1 loaf
